做法:春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
