做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
