做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖。
