做法:春笋切成片后(hòu )加(jiā )少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
