做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
