做法:春(chūn )笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
