做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
