做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
