做法:春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快(kuài )熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
