做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
