做法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候(hòu )加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
