做(zuò )法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的(de )时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
