做法:春笋(sǔn )切成片后加(jiā )少许盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
