做法:春(chūn )笋切成片后加少许盐(yán )捞出后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干(gàn )的时候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖(gài )上锅盖焖(mèn )。
