做法:春(chūn )笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
